he activity of the fatty acid medified superoxide dismutase ( FA-
SOD ) and superoxide dismutase(SOD)were studied in the different conditions. The results showed
that the activity of FA-SOD wasgreater than that of SOD in heat,acidic and basic stability. The
activity of FA SOD and SOD de-creased in several beverages except in beer.
