摘要
利用碱性蛋白酶对螺旋藻蛋白进行水解 ,用正交方法选择最适温度、酶与底物比(E/S)、pH值等反应条件 ,以蛋白质收率为衡量指标 ,优化出最佳水解工艺条件。
Hydrolysis of protein in spirulina by alcalase has been studied.Otimal temperature,pH value and E/S were investigated respectively by orthogonal design. Meanwhile optimal condition of the process was obtained by the index of the yield of protein.The effect of hydrolysis time on hydyohysis result was also investigated.
