摘要
测定了棘腹蛙肌肉的蛋白质和 16种氨基酸的含量 ,并与鳖、乌鳢、鲈鱼、鲫鱼、瘦猪肉、牛肉、牛乳和鸡蛋的相应成分作了比较 ,表明棘腹蛙的必需氨基酸含量高且平衡性好 ,鲜味氨基酸含量也较高 。
The protein and 16 amino acids content of muscle of Rana boulengeri were determined and compared with those of muscle of Pelodiscus sinensis, Ophiocepha argus, Stizostedion vitreum, Carassius auratus, thin pig, cattle and those of milk and egg. There are indications that the essential and delicious amino acids content of muscle of Rana boulengeri are high and good in equilibrum. The Rana boulengeri's meat is delicious.
