内蒙古地区乳制品中乳酸菌的分离、鉴定 被引量:5

ISOLATION AND IDENTIFICATION OF LACTIC ACID BACTERIA IN INNER MONG0LIA

摘要 本实验从内蒙古半荒漠草原带达茂联合旗和苏尼特右旗的牧民家庭中采集乳样,进行乳酸菌的分离和生物学特性的研究。从乳样中共分出44株乳酸菌,其中乳明由珠菌1株,占分高总数的2.3%,类肠膜明串珠菌20株,占分离总数的45.5%。所测试的菌株符合相应菌属和种的形态、染色特性和生化反应标准,同一种的不同菌株间的精发酵试验有一定的差异。 In this study,Lactic acid bacterium was isolated from the samples of milkand milk products collected from the herdsman's home in Darhan-Momiangan UnitedBanner. and Sunlit Right Banner in Inner Mongolia. Its biological properties were studied. 44 strains of Lactic acid baciteria, including one strain of Leuconostoc lactic andtwenty strains of Leuconostoc paramesenteriodes, were isolated. The results .revealedthat, on the whole,the strains tested had the same morphological and staining characterand biochemical reaction in comparison with standard genus or species,There were a fewdifferences in the carbohydrate fermentation test among differnt strains of the samespecies.
