摘要
研究采用超滤法与凝胶过滤色谱 (GFC)相结合实验方法就大豆蛋白酶解产物寡肽混合物的分子量的分布状况进行了测定。研究结果表明 ,木瓜蛋白酶与Asl .398蛋白酶的酶解物中以分子量在 10 0 0D以下的小肽为主 :木瓜蛋白酶解产物中分子量 10 0 0D以下的占 6 3.9% ,10 0 0~ 2 0 0 0D之间的 4 .6 4 % ,2 0 0 0~ 4 0 0 0D之间的占 8.2 1% ,4 0 0 0~ 10 0 0 0D之间的占 8.2 0 % ,分子量 10 0 0 0D以上的占 15% ;As1.398蛋白酶酶解物中分子量 10 0 0D以下的占 72 .1% ,10 0 0D~ 2 0 0 0D的占 6 .4 2 % ,2 0 0 0D~ 4 0 0 0D之间的占 2 .5% ,4 0 0 0~ 10 0 0 0D之间的占 3.92 % ,10 0 0 0D以上的占 15%
The molecular weight distribution of oligo-peptide in soybean protein enzymolysis products was determined through ultrafiltration combined with gel filtration chromatography(GFC).The results indicated that in the products enzymolysed by papainase and As1.398,oligo-peptide with molecular weights below 10000 D were predominated.In the products enzymolysed by papainase,peptides with molecular weight below 1000 D were 63.9%,between 1000 D and 2000D were 4.64%,between 2000 and 4000D were 8.21%,between 4000 and 10000D were 8.20% ,above 10000 D were 15%.In the products enzymolysed by As1.398,peptides with molecular weight below 1000 D were 72.1%,between 1000 and 2000 D were 6.42%,between 2000 and 4000 D were 2.5%,between 4000 and 10000 D were 3.92%,above 10000 D were 15%. ]
