摘要
目的:为提高生猪肉品的卫生质量,预防食源性疾患的发生与流行,探讨综合管理措施。方法:卫生学调查。结果:发现旧屠宰场存在布局及选址不合理,设备、设施简陋,卫生条件恶劣。综合管理措施实施后三年来,实现屠宰厂场规范管理,卫生状况得到较大的改善。结论:综合管理措施管理效益显著。
objective: In order to improve the hygienic quality of raw pork,and prevent foodborne illness being occured and prevailed, discuss the comprehensive control methods.Methods: Hygienic investigation. Results: poor layout, location, equipment and health condition in old abattoir.The comprehensive control methods have done for three years, the hygienic conditon of abattoir has been well improved. conclusion: The value of thecomprehensive control methods is remarkable.
