摘要
通过对松花蛋形成过程中蛋壳和壳内膜的断面扫描电子显微镜 (SEM )观察 ,证实了铅、铜、锌等金属在松花蛋的形成过程中 ,确实起着关键的作用 ,它们通过在蛋壳和壳内膜上形成不溶性的沉淀物来堵塞蛋壳孔和壳内膜的腐蚀孔 ,从而达到控制碱向蛋内过量渗入的目的。并观察到不同的金属在松花蛋的形成中产生的沉淀物颗粒有较大的差异。
This paper substantiates that the metals(such as Pb,cu,zn,etc)play an important role in the process of soohua egg fermation by scanning electron microscopic(SEM)picture They build up a kind of indiscerptible accumulated particles to block the eggshell holes and the cauterized holes of eggshell film so that the alkali superfluous infitration into the eggs is controlled,It is also observed that there is substantial difference between the sediment granules for different metals during the process of soohua egg formation
