摘要
本文对以低脂玉米粉生产淀粉糖浆时产生的废料玉米渣为原料 ,以沪酿 3 0 4 2和AS3 350为菌种 ,采用分开制种曲 ,混合制大曲 ,低盐固态发酵和高温短时浸淋方法 ,酿造特级酱油的新工艺进行了研究 。
In this paper,the new technique of producing special grade sauce has studied by using corn lees as protein material and Aspergills aryzare 3.042 and Aspergills niger 3.350 as production strain and applying double strain culture,low-salt solid fermentation and high-temperature short-time extractible technology.The optimum production technique conditions have also defined.The corn lees are from starch sugar production by low fat corn powder.
