摘要
测定了汾河难七种野菜中硝酸盐、亚硝酸盐、维生素 C和氨基酸的含量 .结果表明刺儿菜、藜、碱蓬的硝酸盐 ,亚硝酸盐含量较高且均超标 ,不宜食用 ,苦荬菜的亚硝酸盐含量虽较高 ,但其 Vc含量极其丰富 ,若食量作一定限制 ,还是可以食用的 ;地肤、车前、苦菜的硝酸盐与亚硝酸盐含量均较低 ,且 Vc及氨基酸含量也较高 ,可以食用 .
The contents of nitrate, nitrite, vitamin C and amino acid of seven wild vegetables of Fen he beach were determined. The results indicate that Cirsium segetum, Chenopodium album and Suaeda glauca Beg. are not edible because of higher contents of nitrate and nitrite; Although the content of nitrate and nitrite in Ixeris denticulata (Houtt.) Stebb. Slightly exceed the limited standard, if the diet is restricted, it is also edible for higher Vc content; while Kochia scoparia (L.) Schrad, Plantago depressa Willd. and Ixeris chinensis (Thunb.) Nakai have good quality because of lower content of nitrate and nitrite, and medium content of Vc and amino acid.
