摘要 选用不同的温湿度条件对 4种国产白肋烟进行加工工艺试验 ,并对白肋烟处理前后的化学成分进行了分析。试验结果表明 ,白肋烟烘焙质量不仅与干燥区气流温度有关 ,而且与烘焙时的湿度条件密切相关 ,干燥区气流湿度是影响物料温度和白肋烟处理质量的重要因素。应根据所要处理白肋烟的感官质量和化学成分特点确定加工工艺条件 ,对总氮和总挥发碱含量较高、劲头较大、干燥感强、刺激性和杂气较大的白肋烟应采用高温处理 ,在处理温度较高时宜采用相对较低的湿球温度条件。对于总氮和总挥发碱含量适中、香气较好、劲头适中、干燥感不明显、刺激性和杂气较小的白肋烟应采用低温处理 。 typical kinds of domestic burley tobaccos were roasted under different air temperature and humidity.Chemical compositions of burley tobacco were analyzed before and after roasting.Results showed that 1)air humidity in drying section was an important factor that affected material temperature and quality of burley tobacco treated,and 2)the different roasting conditions should be applied according to the sensory and chemical characters of burley tobacco.The conclusions were that a higher air temperature and lower air humidity should be applied in the treatment of burley tobacco with heavy offensive odor, high total nitrogen and total volatile bases,and on the contrary,a relative low air temperature and high air humidity should be used to treat the burley tobacco with full flavor,medium total nitrogen and total volatile bases.
