摘要
为获得多肽含量高的海参蛋白水解液 ,研究了 3种蛋白酶对海参蛋白的水解能力 ,确定以A .S1 3 98中性蛋白酶为最佳用酶。又通过正交实验得出A .S1 3 98中性蛋白酶的最佳酶解工艺条件 :温度 50℃ ;pH7.0 ;底物浓度 8% ;加酶量 1 .5% ;水解时间 1 .
By using different protease, we study the hydrolysis of protein from sea cucumber. As a result, we find the A.S 1398 neutral protease to be the best one. Through orthogonal test, we determine the optimum hydrolytic condition as follows: temperature 50?℃, pH 7.0, protease 1.5%, protein solution 8% of, and hydrolysis time 1.5?hour.
