摘要 中国即将加入世贸组织 ,面对国际酒类市场竞争 ,中国白酒必须作出应对。纯净白酒应运而生 ,它的产生是科技进步和社会进步的结果 ,代表了中国白酒发展方向 ,是新生的酒种 ,使白酒产品出现新格局。纯净白酒面临的问题是如何适应市场 ,根据中国国情确立自己的风格。纯净化的途径有二 :一是液态法 ,通过现代蒸馏设备生产高纯度酒精加工纯净酒 ;二是固态法白酒生产中量质摘酒 ,除去甲醇和过量杂醇油。该法保存了固态法白酒风味 ,但去杂不彻底。(丹妮) The newborn liquor category- purified liquor, as an outcome of quick technological and social development, directs the development of liquor-making industry in China, it has broken the original patterns of liquor products and it emerges at the historical moment when liquor-making industry in China have to make relevant policies to deal with the increasingly drastic international competition after the forthcoming fact of China′s return to WTO. And the problems we should tackle with now is how to accommodate the liquor to the market and establish its own style according to the national situations. The ways to its purification are: 1. Liquid fermentation method. High-purity alcohol produced by modern distillation apparatus is the prerequisite for purified liquor production. 2. Solid fermentation method. Liquor storage according to its quality in liquor production could remove methanol and superfluous fusel oil. The liquor flavour by solid fermentation method could be kept by this method but the sundries could not be removed completely.
