摘要
芽酚和乙基麦芽酚作为提香剂和口味改良剂广泛应用于食品工业中 ,介绍了麦芽酚和乙基麦芽酚的结构和性质 ,及它们在黑啤酒生产和果啤生产中的应用 。
Maltol and ethylic maltol are widely used in food industries as aroma-increasing agents and taste-improving agents. Their structure and properties were introduced and their application in dark beer and fruit beer brewing was illustrated in this paper. Besides, the ways to improving the flavour of dark beer and fruit beer and to controlling the bitterness and off-flavour were also investigated.
