摘要
本文对竹叶黄酮水解苷元的抗油脂氧化和清除羟基自由基 (·OH)活性进行了测试。TBA快速测定法表明 ,在菜籽油体系中 ,水解苷元显示了与BHT可比的抗氧化活性 ,其有效浓度在 0 .2‰左右 ;改良烘箱法试验表明 ,水解苷元抑制猪油过氧化的能力与槲皮素和茶多酚相似 ;采用Vc -Cu2 + -H2 O2 -酵母多糖体系产生·OH ,用化学发光法测定的结果显示 ,水解苷元的清·OH活性接近槲皮素。
This paper deals with the anti-lipid oxidation capacity of the hydrolytic glycone of bamboo leaf flavone glycoside,as well as its ability to scavenge hydroxyl radical (·OH).TBA rapid test showed that the flavone glycone had strong antioxidative activity in rape oil,which was comparable with BHT.Improved oven-storage test indicated that it inhibited lard peroxidation as effectively as quercetin and cetachin.Chemilumiscence method displayed that it was an excellent scavenger of ·OH produced by Vc-Cu 2+ -H 2O 2-yeast polysaccharides system,like quercetin.All of these results confirm that the flavone glycone of bamboo leaf is of potential value as oil and fat antioxidant in food industry.
