摘要
醉蟹是一种螃蟹的深加工食品 ,因其加工的特殊性 ,保质期仅为 3个月 ,经6 0 Coγ射线 4~ 8kGy辐照 ,结合低温 ( 0~ 5℃ )贮藏 ,可将其保质期延长至 9个月。
Drunk crab is a kind of specially processed crab food with the shelf time of 3 months when stored at low temperature of 1 to 5℃. The shelf time of the tin paked drunk crab can be extend to 9 months when the crab food is irradiated by 60 Co γ rays with the dosage of 2~8 kGy. The irradiation processing technology will make drunk crab be supplied the whole year.
