摘要
发酵剂对发酵乳的品质的影响是极其重要的。发酵乳技术重大突破之一,就在于改变了传统液态发酵剂生产模式,冷冻、浓缩、干燥发酵剂在发酵乳生产中的应用。本文就直投式菌种的应用情况进行简要介绍。
The preparation of starters is of prime importance in fermented milk production. In the development of starter sys-tems and the more widespread use of concentrated starters, bulk starter production has become one of the most importantsteps in the production of fermented milk. Applications and production of direct vat set were summarized in this paper.
