摘要 对安吉县产的绞股蓝进行化学成分的分析。绞股蓝提取液中除了含有主要活性成分——绞股蓝皂苷之外,还含有各种氨基酸、矿物质和维生素。不同提取方法对绞股蓝提取液中各种化学成分的含量影响甚大。采用乙醇提取的提取液中绞股蓝皂苷的含量比水提法高1.8倍;而用水煎煮的提取液中必需氨基酸,维生素C及钙的含量则明显高于醇提法。因此,制备绞股蓝系列产品时,采用两法并举的生产工艺,既保证了产品中皂苷的含量,又有较多的其它营养成分。 Chemical constituent analysis for the extract of Gynostemma pentaphyllum of Anji County, Zhejiang Province was examined in this paper. The extract cont- ained various amino acids, minerals and vitamins besides the main functional constituent—Gynostemma pentaphyllum saponins. The amounts of various gradi- ents in the extract were varied significantly with different extraction methods. The amounts of Gynostemma pentaphyllum saponins in alcoholic extract were 1.8 times higher than that in aqueous extract. But the amounts of the essential amino- acids, vitamin C and calcium in the latter case were higher respectively than that in the former. Therefore, it was suggested that in the process of producing Gynostemma pentaphyllum preparation, the two extraction methods mentioned above might be combined to ensure the higher quantity of both saponins and other nutrients.
