摘要
综述了几类新型的安全、高效的食品保存剂的研究进展。乳酸链球菌素、鱼精蛋白、溶菌酶等肽类抗菌防腐剂为人体或动物体正常蛋白质 ,安全性高 ;从动植物中提取有效成分的天然防霉保鲜剂如中草药提取物、甲壳素及其衍生物等对水果、蔬菜的保鲜效果显著 ;富马酸二甲酯、双乙酸钠是食品、粮食、饲料高效防腐剂。
The research and development of several novel food preserving agents with high safety and efficiency was summarized in this article. The antibiotic preservative of peptide such as Nisin, Protamine and Lysozyme are normal protein of human or animal, so that this kind of preservative is highly safe. The natural mold preventing preservers such as the exact of medicine herbs, Chitin and its derivatives were exacted from the materials of animal or plant, and they has remarkable effect on preserving fruit and vegetable. Dimethyl fumarate and sodium diacetate are the preserver with high efficiency for food and grain as well as forage.
