摘要
目的 了解南京市小学生早餐各营养素摄入情况及不同营养素的早餐对学生脑力工作能力的影响。 方法 对 10 96名 4~ 6年级的小学生 ( 9~ 13岁 ,男 5 2 5 ,女 5 71)进行了早餐询问法膳食调查以及短时记忆量测定和校字法测验。 结果 78%的小学生早餐热量摄入不到 2 0 %RDA ,摄入以混合性食物为主的早餐的学生短时记忆量和大脑工作能力指数最高 ,早餐热能、蛋白质、脂肪、VitB1和Zn、Se的摄入量与学生的短时记忆量和大脑工作能力指数有正相关关系。 结论 需要增加小学生早餐的热量摄入 。
Objective To understend the brdakfast nutrients intake condition in primary schoolchildren and to evaluate the effect of composition of breakfast on children's study ability.Methods A breakfast inquiry survey and the short-term memory test and the random letters test were used in 1 096 primary schoolchildren from fourth to sixth grade (aged 9 to 13 years,boys 525,grils 571)in four schools.Results The breakfast energy intake was below 20% RDA in 78% primary schoolchildren.The children who consume a breakfast with more balance food composition had the highest test scores on the short-term memory test and on the random letters test.The intakes of energy,protine,fat,VitB 1 and Zn,Se were positive correlation with the scores of children on two tests.Conclusion There is need for increasing breakfast energy intake in primary schoolchildren.To intake breakfast with balance nutrients in conducive to the study performence of children in the morning.
