摘要 经筛选试验,发现我国甘草对食用油脂具有很好的抗氧化性能,国内尚未见到这方面的报道.甘草的不同溶剂提取物的抗氧化效能随添加量的增加而增强,乙醚提取物0.1%、乙醇提取物0.3%时,有优于合成抗氧化剂BHT最大限制用量的作用.甘草的酸性丙酮提取物也具有一定的抗氧化效能,经硅胶薄层分离纯化得到的甘草酸,抗氧化效能不及粗提物.经试验发现甘草酸具有良好的乳化作用,其效能接近大豆磷脂,而在其他一些性能方面则优于大豆磷脂. Licorice root has a good antioxygen effect on edible fats and oils through screen tests. The antioxygen effect of licorice root extracts which were extracted with different solvents increased with the extracts quantity. Effect of ether extract 0.1%, ethanol extract 0.3% were all better than that of BHT at maximum limit dosage. The extract of acid acetone had some antioxygen effect. The effect of licorice acid which was seperated and purified through silica gel chromatograghy was not as good as crude extract. Licorice acid had a good emulsification and the effect was closed to soybean phosphatide or better than soybean phosphatide in other properties.
