摘要
菜名是菜肴的组成部分 ,具有商业价值和推销功能 ,中国菜肴命名方法多样 ,特别是艺术菜名 ,古已有之 ,体现了中国饮食文化的博大精深 ,当前饮食行业中 ,菜肴命名存在问题 ,甚至出现了滥起菜名的不良现象 ,需引起注意 ,对面广量大的中国菜肴如何进行规范化的命名 ,值得探讨。
Dish name is an important part in dish forming with business value and marketing function. There have been various ways for Chinese dishes naming since ancient times, which embodies Chinese diet culture broad and profound. In the present diet trade, the appearance of some unhealthy tendencies of naming dishes excessively should be paid attention to. How to standardize the naming of common dishes is worth discussion.
