生物活性肽是蛋白质经酶水解的产物,不仅能提供营养,并且具有特殊的生理功能。本文讨论了活性肽酶法制备中蛋白质种类、蛋白酶对产物的影响,并探讨了工艺流程中的关键性步骤。
Biological active peptides (BAPs) is protein hydrolysate produced by protease. It can not only provide nutrition, but also play special function. This paper reviewed the effect of protein, protease in hydrolysis and discussed some important procedure in processing.
