研究在豆奶、豆粉生产中,影响大豆尿酶活性钝化的因素,确定了最佳工艺参数。
In this paper,we studied the factors which in-fluenced inactivation for soybean u rease,in the producting of soybean milk and powder,and defin ed the optimum processing parameter for soybean ur ease inactivated.
