摘要
选用耐氧驯化过的双歧杆菌分别与不同来源的酸奶菌种进行混合发酵。比较了不同接种量对制作的发酵乳在保存期内所含双歧杆菌活菌的影响。实验表明 :在双歧杆菌接种量不大 (体积分数2 % )的情况下 ,可在发酵乳中获得可观的双歧杆菌。在 1 0天内 ,双歧杆菌活菌数达 1 0 8cfu/m L,随着时间的延长 ,至 1 5天 ,双歧杆菌活菌数仍可达 1 0 7~ 8cfu/m L。
Oxygen tolerated bifid bacteria are selected in this paper to mix with different yogurt culture with comparison made on the effect of different inoculating proportions on the quantity of bifid bacteria in the fermented milk during the storage time. Results show that the number of active bifid bacteria is high in the fermented milk although the inoculating proportion is low (2%).The number of active bifid bacteria rises up to 10 8 cfu/mL within 10 days, and on the 15th day the number soars up to 10 7~8 cfu/mL.
