摘要
本文以紫葡萄皮为原料 ,5 0 %乙醇做溶剂提取了紫色素并研究了该色素的提取方法及理化性质。通过数次的实验证明该色素耐酸、耐光、在食品工业 。
The extraction of purple pigment from grapeskin and it's stability are studied in the paper.The pigment is stable under certain acidic condition and worth developing in food industry.
