摘要
从石榴花中提取一种桔红色色素 ,并对该色素的理化性质进行研究 ,结果表明该色素在弱酸条件下 ,具有较好稳定性 。
Results of the study of the process of extracting of red pigment from pomegranate flower and its physicochemical property show that the pigment is stable under acidic condition and is thus worth developing in the food industry.
