摘要 本文以山西五寨马铃薯淀粉为原料,应用a-淀粉酶和糖化酶进行了双酶协同水解淀粉的动力学研究,建立了修正的双酶一步法水解马铃薯淀粉的动力学速度方程: 协同作用阶段 0m10m1ddSKSVtS+= ; SKGKSVtG++=)/1(ddim20m20 协同作用结束后 1im21m2)/1(1.1/ddSKGKSVtS++=-; SKGKSVtG++=)/1(ddim2m2 实验结果与计算机模拟结果吻合良好。 The hydrolysis kinetics of potato starch from Wuzhai in Shanxi province, with a-amylase and glucoamylase simultaneously, was studied. By investigating the variation of specific rate with pH value, reaction temperature, the amount of a-amylase and glucoamylase, the suitable hydrolysis condition was determined as 60℃ and pH=5.2. Based on the assumptions a modified kinetic model for hydrolyzing potato starch with two enzymes by one-step method was established, and the kinetic constants were determined through experiments. Finally a good agreement between experimental data and computer simulation was obtained. The kinetic equations were as following: synergizing stage: 0m10m1ddSKSVtS+= SKGKSVtG++=)/1(ddim20m20 after synergizing stage: 1im21m2)/1(1.1/ddSKGKSVtS++=- SKGKSVtG++=)/1(ddim2m2
