摘要
利用苦荞麦粉和小麦面筋为主要原料,加入植脂淡奶、南瓜粉、木糖醇和蛋白糖等辅料,研制出了苦荞复合保健面包。通过配方、工艺条件的确定,制成了具有普通面包色、香、味、形相似的面包。它可供肥胖症、高血脂、糖尿病等患者食用,具有一定的保健功能。
Using bitter buckwheat flour and wheat gluten as raw material,mixing subsidiary raw material which had evaporated filled milk,pumkin flour and protein sugar,ext,the health bitter buckwheat bread was produced.After the product ingredient and technology condition were determined the bread which had the same colour,smell,taste and shape as common bread was used for the people which suffered from corpulent:piarhemia and diabetes mellitus.It was a healthy food.
