摘要
[目的 ]通过对测定蛋白质功效比值 ,评价野生菰米的蛋白质营养价值。 [方法 ]采用动物实验方法 ,分别用菰米和酪蛋白饲养大鼠后 ,计算两组动物的平均增重、内脏总体均重和蛋白质功效比值等指标。 [结果 ]菰米组、酪蛋白组动物平均增重分别为 77 12 g和 41 79g ( P <0 0 1) ,内脏总体均重分别为 9 892 g和 7 413g( P <0 0 1) ,菰米组均优于酪蛋白质组。野生菰米的矫正蛋白质功效比值为 3 0 5。 [结论 ]野生菰米的蛋白质营养价值较高 ,易被机体吸收利用 ,可促进动物的生长发育。
