摘要
根据窖泥中主要微生物功能菌的特点 ,采用仿生学原理培养出窖泥功能菌发酵液 ,并将窖泥功能菌发酵液运用到浓香型大曲酒生产中 ,使之提高浓香型大曲酒的酒质。
The new fermented liquid is produced by biological imitation theories according to the properties of the functional bacteria in pit mud and it is applied in the production of Luzhou-flavour Daqu liquor which could improve the liquor quality.(Tran.by YUE Yang)
