摘要 该文报告了对贵州水城生姜资源的研究成果 ,测定了生姜精油及姜辣素含量 ,用GC MS鉴定了精油化学成分 ,进行了生姜有效成分的提取方法研究以及系列产品的开发工艺研究 ,为生姜资源的深度开发进行了基础工作。研究指出 :贵州生姜资源丰富 ,仅水城县发耳乡就年产 8× 1 0 4t是该区脱贫致富的产业之一。利用生姜的有效成分和无毒副作用的优点 ,可开发出一系列食品。 Zingiber Officinale Roscoe is utilized for spice and perfume production. The contents of Guizhou essential oils and pungent compounds were determined in the study and the results indicated that Guizhou ginger contains 072% of essential oil and 285% of pungent compounds. The chemical compositions of the essential oils were analyzed by Gas ChromatographElectro Spray Mass Spectrometeric analysis. The compounds are listed below: βZingiberene (2551%), βThujene (1752%), Farnesene (1062%), Camphene (10 59%), Sesquiphellandrene (10 39%), α Curcumene (5 39%), α Pinene (4 97%), 6 Methyl 5 heptene2 one (2 28%), Borneol (1 23%), α Thujene (1 14%), Linalool (0 67%), β Pinene (057%) and the micro constitutents. Ginger essential oils and ginger gingerols are two main products from deep processing of ginger, which have high application value and development potentials in foodstuff industry and industrial medicine. This paper also reviews their components, properties, functions, extractions, applying properties, certain experimental results, research progress and developments about ginger healthy food and medicine preparations.
