摘要
首次利用透射电镜观察了 N.K-0 1黄原胶和长角豆半乳甘露聚糖处于协效状态的两种多糖分子的物理形貌 ,发现处于协效增粘状态的两种多糖分子相互作用 ,分子间形成相间排布的联结区和分离区 ,而处于协效凝胶状态的两种多糖分子则相互交织成网状结构 .这些发现为揭示两种多糖分子间协效作用机理提供了更直观的实验依据 .
This research indicted that synergism appeared after N.K 01 xanthan and galactomannan were mixed together. When used transmission electron microscope to observe the molecules in synergy, result found the two kinds of molecules formed interact and attached region alternate with separated region in synergistic increasing viscosity state, meanwhile molecules interwined to form three dimensional net in synergistic gelling state. These discoveries provide experimental evidence to reveal the mechanism between two kinds of polysaccharides.
