摘要 针对啤酒糟中蛋白质的组成 ,研究用碱法提取啤酒糟中的蛋白质 ,并作比较分析 ,得出一种经济合理的提取方案 ,为合理利用啤酒糟提出了一种新方法 . According to the protein composition of brewer's spent grain, the paper gives a method to extract protein in brewer's spent grain by alkali.Through comparation and analysis, the paper gives an economic extraction method,which is offered to utilize brewer's spent grain.
