摘要
探讨了不同浸麦度、Na2 SeO3 及制麦添加剂浓度对麦芽富硒的影响。结果表明 ,在浸麦度为 4 2 %时使用Na2 SeO3 处理最佳 ,麦芽硒含量比对照提高 35倍 ;抗生素P和赤霉素浓度分别为1 0 0mg/L和 0 0 5mg/L时表现出对麦芽富硒最大的促进作用 ,麦芽中硒含量分别比对照增加 1 2 4和 3 35倍。本实验的研究为工业化富硒麦芽的生产提供了科学的理论根据。
Different malt soaking degree,Na 2SeO 3 and malting additive concentration on barley Se- enrichment were determined.The results showed that the best condition was 42% malt soaking degree, 100 mg/L concentration of antibiotic P and 0.05 mg/L concentration of gibberellin,respectively.And the content of Se in barely was 35,1.24,3.35 times higher than the controls.The research provided a theoretical basis for the producing of enriched-Se malt industrializely.
