摘要
测定和分析了湖南省 2 5只具代表性的特种绿茶的主要生化成分。结果表明 :特种绿茶的全氮、游离氨基酸和咖啡碱的含量均高于普通绿茶 ,而可溶性糖和粗纤维的含量则低于普通绿茶 ;就品质成分来分析 ,产于山区的特种绿茶优于产于丘陵区的 ;茶树品种和原料嫩度均影响特种绿茶的主要生化成分含量。根据研究结果 ,作者提出了湖南名优茶在生产时间上限制在早春 ,在生产布局上应以山区为主 ,结合有特殊条件的其他地区来发展名优茶 ;在生产原料上 ,应以一芽一叶为主 。
Analysis was made of the biochemical compositi on of 25 special green tea products made in Hunan. Results show that there is a hi gher content of total nitrogen, free amino acids, and caffeine but a lower conte nt of soluble carbohydrates and crude fiber in these tea products than in the co mmon tea used as a check. As for the tea quality, those produced in high-altitu de mountainous areas are better than the ones from low-altitude hilly and uplan d areas. Both the tree cultivars and the tenderness of tea shoots play an import ant part in composing the content of the biochemical ingredients analyzed. There fore, it is recommended that for the production of famous green tea in Hunan, ea rly spring is the best time, high-altitude mountainous areas are the best garde n sites, and one-bud with one-leaf shoot is the best raw material.
