摘要
价值工程的管理思想与技术 ,为餐饮产品的策划、经营提供了科学的方法。通过对餐饮产品及其构成要素的功能分析 ,可以实现餐饮产品功能与成本的优化设计。开发餐饮外围产品的功能 ,塑造产品的良好形象 ,提升餐饮产品的文化品味 ,都是提高餐饮产品价值的有效途径。
The management idea and technology of value engineering provide a scientific method to the scheme and managing of diet products. By functional analysis of diet products and their consisting key elements, the optimized design of the function and cost of diet products can be realized. Developing the function of diet peripheral products,creating good product characters and rasing cultural taste of diet products are all effective approaches to raise the value of diet products.
