摘要
鲢鱼是一种低值淡水鱼,基本用于鲜销,深加工水平较低。本文主要研究模拟虾饼、模拟蟹饼、模拟蟹腿三种低值鲢鱼模拟虾蟹肉制品的生产工艺及配方,为淡水鲢鱼的深加工创立一条新途径。
Silver carp is a main fresh water fish in china and has low value、 high quality.This paper studied the best prescription and technology of mimic shrimp cake, mimic carp cake and mimic shrimp leg. It can create a new approach for the use of silver carp.
