摘要
叙述了微生物与食品工业的关系,微生物在传统食品、保健食品和改善食品品质中的应用,讨论了微生物在食品工业应用中存在的问题及发展前景。
The article reviewed the relation between microbiology and food industry. It also reviewed the application of microbiology in traditional food, health food and improving the quality of food. In the end the existing problem of the application of microbiology in food industry and the development prospect were discussed.
