摘要
传统的制糖生产工艺都要求酸性煮糖,不管是生产耕地白砂糖,还是生产精炼糖都是如此。而泰国的精炼糖生产采用碱性煮糖.本文研究了pH与产品质量、收回率以及产品贮存问题的关系,表明在碱性条件下煮糖,可以稳定产品质量,达到提高煮炼收回率的目的,减少了硫熏工序,从而减少了生产成本。最后建议,精炼糖的生产应采用碱性煮糖的工艺,在稳定产品质量的前提下,可以提高煮炼收回率,减少产品贮存过程中产品质量的变化。
The process of sugar production is used acid syrup to crystal in China, not only for p1oduction white sugar but also for refinely process. But it is used alkaline syrup to crystal for refinely process in Thailand. This paper analysis how interact between pH and product quality and recovery. It could improve boiling house recovery and 1ow production cost in the base of good quality if use crystal in alkaline. The paper think at last that it is rather using alkaline syrup to crystal than acid syrup. Because that it is not only useful for product quality and boiling houe recovery, but also useful for product store in using alkaline syrup.
