摘要
探讨了以海藻酸钠为原料研制生产果冻的工艺及配方 ,确定了果冻冰淇淋及复合乳化稳定剂的配方 ,试制成外观诱人。
The formula and process of jelly designed specially for Jelly Ice cream, which is made from Sodium Alginate etc were discussed and researched. Both the formula of main material and that of complex emulsifying stabilizers for Jelly Ice cream were determined, and a kind of attractive and delicious frozen drink with health protection function was produced.
