摘要 茶叶中可溶性物质浸出的分离常数、浸出速率、浸出量和浸出液的品质受诸多因素的影响。如可萃取物质的含量、茶叶形状和大小、温度、溶剂种类、液体的搅拌和萃取设备等因素。 The partition constant,extraction rate,extraction yield and infusion quality related with the extraction of soluble substances from tea are usually influenced by some factors,such as the content of soluble substances,the shape and size of tea,temperature,the type of solvent,the agitation of liquid and the equipment used for extraction.The relationship between these factors and the extraction yield and infusion quality is discussed in the paper.
