The partition constant,extraction rate,extraction yield and infusion quality related with the extraction of soluble substances from tea are usually influenced by some factors,such as the content of soluble substances,the shape and size of tea,temperature,the type of solvent,the agitation of liquid and the equipment used for extraction.The relationship between these factors and the extraction yield and infusion quality is discussed in the paper.
