板栗种子不同部位褐变差异的生理生化研究 被引量:3

摘要 板栗种子在成熟及沙藏过程中 ,胚轴浸出液的相对电导率和紫外吸收值、胚轴的总酚含量和 POD活性均明显高于边果肉 ,而 SOD活性则明显低于边果肉 ,MDA的积累也明显快于边果肉 .推测胚轴细胞膜的完整性更易丧失 。 In the process of ripeness and the storage of chestnut seeds, the relative electric conductivity and ultraviolet absorption value were higher obviously in embryonic axes than those in outer of flesh. The contents of total phenolics and the activity of POD were higher in embryonic axes than those in outer of flesh too. The SOD activity was lower in embryonic axes than that in outer of flesh and the accumulation of MDA was more quickly in embryonic axes than that in outer of flesh. It is suggested that the membrane integrity of axes cells could be damaged more easily than that of flesh cells and the browning could occur more easily and early in axes than that in flesh.
