摘要
中华稻蝗体内富含高质量蛋白质 (其中必需氨基酸占氨基酸总量的 6 5 %~ 72 % ) ,且含多种维生素、微量元素 ,是一种极好的蛋白质资源。为开发这一蛋白质资源 ,使其成为人们易于接受的食物形式 ,本研究分别采用As 1398碱性蛋白酶、As 1398中性蛋白酶、木瓜蛋白酶和胰蛋白酶对稻蝗全虫匀浆进行水解。结果表明 ,实验室最佳酶解工艺条件为 :木瓜蛋白酶 ,底物浓度质量分数为 7% ,酶量 /底物 (E/S) 80 0 0 μmol/ (L·min·g) ,温度 5 6℃ ,pH值 8 0 ,水解时间 7h。在此条件下 ,水解度质量分数为 5 1 0 % ,平均短肽氨基酸残基数为 3 94。
Oxya chinensis thunberg has not only a high content of protein, in which essential amino acids are 65%-72%,but also many kinds of vitamins, trace elements and etc. Therefore it is a very excellent protein food resource. In order to trans the Oxya chinensis thunberg protein into an acceptable food, we have carried out the enzymatic hydrolysis research as following: The homogenate of Oxya chinensis thunberg is hydrolysated by As.1398 Neutral protease, As.1398 Alkalescent protease, Papain and Trypsin separately. Based on the research, we have gotten the best technical parameters: hydrolysated by Papain, substrate concentration 7%, enzyme /substrate content (E/S)8?000?μmol/(L·min·g), temperature 56℃, pH8.0, the time of hydrolysis 7 hours. Under those conditions, the degree of hydrolysis is 51% and the average amino acid residue 3.94.
