摘要
以我国珍稀米种黑米为原料 ,应用根霉和酵母菌发酵 ,生产新型黑色无醇保健饮料 .测试结果表明 ,该工艺简便易行 ,所得产品不仅克服了黑米特有的不良气味 ,且风味独特、口味纯正、清凉爽口等特点 ,具有较高的营养价值 .
This research applies the fermentation technology of Rhizopus and yeast to prepare black rice beverage of no alcohol. The results show that the process is easy and feasible, The product has no bad smell that black-rice specially owns, and its flavor is unique, its taste is pure and pleasantly refreshing, at the same time it has high nutritious value.
