摘要
20 0 0年对储藏了 3.5年的陈种与 0 .5年的新种稻谷米质变化进行了研究。结果表明 ,11个籼稻品种的陈种 ,其表观直链淀粉含量、热水不溶性直链淀粉含量基本稳定 ,但其粘滞性淀粉谱发生了显著变化 ;所有 11个品种的起浆温度从平均的 75 .8℃增高到 84 .7℃ ,增幅为 4 .0~15 .1℃ ;有 10个品种的峰值粘度和崩解值下降 ,1个品种上升 ;热浆粘度、冷胶粘度和消碱值有升有降 。
The quality characteristics of dehulled rice were compared after grains of 11 rice varietics were stored for 3.5 and 0.5 years,respectively.The results showed that the apparent and the hot water insoluble amylose contents were not influenced.However, the RVA (Rapid Visco Analyser) profile markedly changed with storage and the pasting temperature increased in all varieties analysed, from 75.8℃ to 84.7℃ on average, with absolute increases ranging from 4.0℃ for the variety R1494 to 15.1℃ for R1304. The peak viscosity value and the breakdown value reduced in 10 of 11 varieties tested, while the hot and the cool paste values,and the subduction value increased in some varieties, but decreased in others.
