传统工艺腐乳中添加水解珍珠液而精制的新型腐乳是现代生物科技与中国传统食品的完美结合 ,使腐乳更含有人体所必需的微量元素 ,增加了活性钙 。
A new type of sufu was acquired by adding hydrolysate of peard into the traditional sufu,which resulted in a perfect combination of modern biotechnology and Chinese traditional production technology.The content of trace elements that are necessary to human was enriched,and the calcium was fortified in this kind of sufu.The technology could be widely applied in snfu production.
