摘要
本文探讨了不同pH值和SO2含量对红葡萄酒酚类物质的影响。结果表明,pH值、SO2含量对红葡萄酒的色度、总酚均有一定的影响,而单宁没有。
:In this paper,an approach to the effect of different value PH and different concentration of So2 on phenols in red wine was made. the result shows that the both exert some impact on the colour and total content of phenols in red wine, but it is no impact on content of tannin.
