盒装巴氏奶货架期的快速预测 被引量:4

Rapid method for predicting the potential shelf life of packaged pasteurized milk

摘要 采用阻抗法进行盒装巴氏奶货架期预测。结果表明,巴氏奶货架期与细菌数对数值密切相关。在30℃、6h预培养下加样300,400μL及37℃、6h预培养下加样100~400μL进行阻抗测定,建立回归方程式均可快速准确地进行盒装巴氏奶货架期预测,整个预测过程耗时14~20h。 Estimation of potential shelf life of packaged pasteurized milk utilizing impedance method was studied.The results showed that there was a highly correlativity between shelf life of pasteurized milk and logarithm of CFU per milliliter.The impedance detect time (DT) after 30 ℃,6 h preliminary incubation added with 300 μL and 400 μL milk sample or after 37 ℃,6 h preliminary incubation added with 100 to 400 μL milk sample were investigated and the regressive equation was constructed for predicting the potential shelf life.Comparing to traditional method,impedance method was a rapid,accurate and convenient method and the whole estimation process could finished within 14~20 h.
