摘要
本文以Willstarter Schudel的醛糖测定方法为依据,从乳糖水解反应的本质出发,提出并建立了一套快速测定低乳糖牛奶水解率的新方法。实验测定结果表明,该方法具有使用方便和操作简单以及快捷准确等特点。
Depending on the aldose measurement method of Willutarter and Schudel, basing on the nature of lactose hydrate reaction, we founded and suggested a new method which can quickly measure the hydrate rate of low lactose milk. The result of experiment shows that this method is easy and quick to master and operate, and the result of it is accurate too.
