摘要
详细介绍了冻干山药片的工艺参数 ,探讨了影响冻干山药片复水性的因素。结果表明 :2mm厚鲜山药片经 80℃热烫 5min、速冻及升华干燥后 ,产品复水迅速 。
The technique parameters of freeze drying of slices of Chinese Yam,providing the information about the influential factors to the rehydration of freeze dried slices of Chinese Yam.The results showed that the products rehydrate wholly and its crispness was kept well,after the fresh slices of Chinese Yam in 2mm thick was scalding in water at 80 ℃for five minutes,fast frozen and lyophilized.
